Cook a Five-Course Pumpkin Dinner This Weekend From Just Two Pumpkins

Spiced seeds, a ginger soup, a warm salad, a whole baked pumpkin and a spiced pie, one menu for six cooked on Saturday 31st October with nothing thrown away.

This Saturday is 31st October, and most of the pumpkins in the shops this week are bought to be carved, lit and put out with the rubbish. You can do far more with yours. Two good eating pumpkins give you enough flesh, seeds and shell for a five-course dinner for six, and every course on this menu puts pumpkin at the centre of the plate.

The menu opens with spiced seeds and a roasted pumpkin dip, moves through a ginger soup finished with brown butter and a warm salad of honey-roasted wedges, and arrives at a whole pumpkin baked with cheese, cream and mushrooms. A spiced pumpkin pie with maple cream closes the evening. Most of the cooking happens in the morning, so you spend the evening at the table with your guests.
